Beetroot, Feta and Sweet Potato Salad Recipe

Take your side salad game to the next level with one of our all-time favourite summer salad recipes. Combining sweet and savoury flavours with a zingy honey mustard dressing, our Beetroot, Feta and Sweet Potato salad tastes as good as it sounds.

At only 137 calories per portion, this salad makes a great accompaniment to your favourite dinner. It’s packed with plenty of vitamins and minerals as well as some carbohydrates and healthy fats. Pair with some cooked chicken, fish, beans, or tofu for some extra protein and you’ve got a well-balanced lunch or dinner.

This is also a super simple recipe that takes only 10 minutes to prep and 30 minutes to roast up the root vegetables. To save time you can prep the roasted veg in advance or double up the recipe and store extras in an airtight container in the fridge to save for salads later in the week!

Ingredients:

80g sweet potato, peeled and cubed
80g beetroot, peeled and cubed
½ red onion, sliced
Low calorie oil spray
¼ tsp cinnamon
¼ tsp ground coriander
10g walnuts
3 handfuls of rocket
10g feta

Dressing:

½ tsp olive oil
¼ tsp balsamic vinegar
¼ tsp honey
¼ tsp Dijon mustard
Freshly ground black pepper

Method:

  1. Preheat oven to 200°C / 180°C fan / gas mark 6.
  2. Add the sweet potato, beetroot and red onion to a bowl and spray generously with low-calorie oil spray. Season with cinnamon and coriander and then mix well.
  3. Line a baking tray with baking paper and then scatter vegetables evenly and place into the oven for 20 minutes.
  4. After 20 minutes, remove from the oven and stir, then add walnuts to the tray and spray again with low-calorie oil spray.
  5. Place back into the oven for 8-10 minutes, tossing halfway.
  6. Meanwhile, mix up the dressing ingredients; olive oil, balsamic vinegar, honey, Dijon mustard and freshly ground pepper.
  7. Serve up by adding rocket to a salad bowl and topping with the roasted vegetables and walnuts. Crumble feta and then drizzle the dressing over the salad.
